The ingredients needed to make Carrot & bean stew:
- Prepare 3 lrg organic carrots
- Prepare 1 tin black eye, black or kidney beans
- Use 1 sml onion
- You need 2 tbsp soy sauce
- Provide 1 tea spoon sweet & smoked paprika
- Take 1 tsp Tom purée
- Get 1 tsp red wine vinegar
- Provide 2 sml garlic clove

- Cook the onion off for a few minutes in whichever oil you prefer to cook with on a low heat. Add carrot and book for about 10 mins without browning.
- Add the Tom purée and spices covering all the carrots and cooking off for about 4/5 minuets.
- Add the oregano and garlic and stir well, cover with stock, beans, tamari and vinegar.
- Turn up the heat and allow to thicken.
- Note: Season and use your coriander to taste
