The ingredients needed to make Shortcakes:
- Take flour
- Prepare coconut milk
- Get & 1/2 tbsp yeast
- Prepare sugar
- Provide hot oil
- Take lukewarm water
- Use Enough oil for deep frying
Instructions to make Shortcakes:
- In a small bowl, add the coconut milk, add yeast and a tablespoon of sugar, stir and let sit 10 minutes.
- In a mixing bowl, add flour and sugar and mix well.
- Make a well at the center and add the hot oil, mix well using a spoon or spatula, then using your hands, mix the flour to ensure there are no lumps.
- Add the yeast mixture then mix. The dough should start to form, if the dough is still stiff, add a little lukewarm water. Knead for 5-10 minutes
- Cover and let sit for 20 minutes.
- On a floured surface, roll out the dough to about 1/4 inch thickness. Using a round cookie cutter, cut out the pieces.
- Heat oil in a frying pan and fry until golden brown. Drain excess oil.
