- Prepare 1 lb ground beef (or shredded chicken)
- Get 1 1/2 packages colby jack cheese
- Take 2 can Enchillada sauce
- Prepare 1 packages flour tortilla (fajita size )

- Preheat oven to 350. Brown and drain ground beef
- Add one can enchillada sauce and 1/2 package of cheese to meat and turn on low. Stir until cheese is melted.

- Pour 2nd can or enchillada sauce and add the ENTIRE package of cheese that is left on top.
