  2. Use 2 cup idli rawa
  3. Take 3/4 cup urad dal
  4. Take 1/4 cup flatnned rice
  5. You need Sambhar
  6. You need 3/4 cup tur dal
  7. Get 1/4 cup masoor/moong dal
  8. Provide to taste Salt
  9. You need 1/4 cup tamrind water
  10. Use 2 tbsp jaggery
  11. Prepare 2 tbsp sambhar masala
  12. Prepare 1 tsp red chilli powder
  13. Prepare 1/4 tsp haldi/ Turmeric powder
  14. Take 2-3 dry red chillies
  15. Provide 2 tsp Curry leaves
  16. Get 1 onion chopped
  17. Provide 1 tomato chopped
  18. Take 1/2 cup bottle gourd/Madras cucumber pieces
  19. Prepare 2 drumsticks cut to 3" piecesl
  20. Prepare Chutney
  21. Get 1 cup fresh coconut pieces
  22. Prepare 1 tbsp roasted chana dal(futana dal)
  23. You need 1/2 tsp sugar
  24. You need 1 inch ginger
  25. Prepare 2 green chillies
  26. Use to taste Salt
  27. Provide 1/4 tsp Jeera/cumin seeds
  28. Provide 1/2 tsp lemon juice
  29. Use Tadka
  30. Take 2 tsp Oil for tadka
  31. Prepare 1 tsp Mustard seeds
  32. Use 1/2 tsp Cumin seeds
  33. Provide pinch Hing/ asafoetida
  34. Get 2 tsp Curry leaves
Steps to make Idli chutney sambar:
  1. Soak idli rawa and urad dal seperately for 8 hours. Soak flattened rice for 15 mins. Rinse and Grind only dal and flattened rice to smooth paste
  2. Squeeze rawa and mix with dal and flattened rice batter and keep aside to ferment for 8 hours in warm place. It will puff up
  3. Grease idli stand and add salt to batter and little water and pour in stands.
  4. Steam for 20 mins on medium flame.
  5. Sambar- cook dal for 3 whistles. Whisk add tamrind water, salt, water, jaggery, sambar masala and keep aside.
  6. In a vessel cook with water onions, tomatoes, bottle gourd, drumsticks with little salt. till completely cooked. Add them to the dal
  7. Mix well and cook on medium flame. Take tadka pan addvoil, Mustard, cumin, curry leaves, red chillies, red chilli powder and pour over sambar
  8. Bring to boil and serve
  9. Chutney- grind everything with little water to smooth paste. Take tadka pan add oil, mustrd, cumin, curry leaves, hing and pour over chutney.
  10. Ready to serve
